Spring fevaah!

Wow it feels like spring today! It is bright and sunny, in the low 60's, snow is melting and birds are singing outside. It definitely gives me some spring fever, or spring fevaah because that sounds better to me.

Spring in Colorado makes me think of hiking- lots and lots of awesome hiking opportunities out here. With the snow melting a bit it will be much easier to just get out and go on a whim. Spring in Colorado also makes me think of my other outdoor passion- visiting adorable mountain towns! My idea of a perfect day is starting a hike in the morning with Chris and the dog, walking around taking in the fresh mountain air for 5-6 miles, and then coming back and exploring a little mountain town near our hike. There are so many little towns to explore with cafes, breweries (yes!), and shops- it is a lot of fun.

Dreaming of the mountains

It's almost spring here in Colorado (well, I guess we'll see what March brings- but it's been warm the last week or so!).  And though I am really excited for warmer weather- easier hikes, more time outside, walking around Boulder, brighter clothes- I still find myself dreaming about the mountains and trying to plan a great escape into the snow! At least I can dream of this...

Mountain happy hour

Our own little Mountain Town? Chris and I went to Grand Lake, CO this summer and it was awesome. I simply love this little town. It is a cute small town, very "Americana", with a board walk, shops, a small brewery, all sitting on a huge lake with mountains surrounding it. It is right outside of Rocky Mountain National Park. I want us to get a condo there- I really fell in love with the place.

Grand Lake boasts having the best fire works display in Colorado. We witnessed it first hand as we spend 4th of July weekend there. It was beautiful- watching fireworks over the mountain lake as we laid on the beach. It was so dark, and the fireworks were reflecting off the water that you couldn't tell where the sky ended and the lake began. We want to go back every year for 4th of July

Sunday Morning

Good Morning!

Girl's wine night last night was fun. We tried to go to Sushi Den on my fave South Pearl Street which was packed as usual. So instead we popped over Black Pearl and got a prime bar spot before the crowds came. We had great wine and some yummy tappas including buckwheat gnocci which was amazing.

Chris made some yummy almond poppyseed muffins this morning from my vegan baking cook book- they are good! Great way to start a Sunday.
